Craving Thai tea but want dessert, too? Meet your new 5-minute favorite: Thai Tea Affogato Float—warm, aromatic Thai tea poured over vanilla ice cream with chewy jelly cubes. The ice cream stands in for the milk + condensed milk used in classic Thai milk tea, so you get creamy sweetness with zero fuss.

Tea base

  • Boiling water — 240 ml (1 cup)

  • Sugar 2–3 tsp or 1–2 Tbsp sweetened condensed milk (optional, to taste)

 

Float

  • Vanilla ice cream — 2 generous scoops (≈150 g)

  • Grass/coffee/agar/konjac jelly — ½ cup, diced

  • Optional: 30–60 ml evaporated milk or half-and-half


Gear

  • Heatproof cup, tea sock/cloth filter (or fine sieve + coffee filter), tall glass, spoon + straw

 

Step 1 — Brew the Thai tea

1.    Add 2 tsp ChaTraMue Thai tea leaves to a heatproof cup.

2.    Pour in 240 ml boiling water; steep 3–5 minutes for a milk-tea strength.

3.    Strain and sweeten while hot (or keep it unsweetened and rely on the ice cream’s sweetness).

Tip: If you like a stronger pour, steep on the longer end (up to 5 minutes). Make up to 24 hours ahead and chill.

 

Step 2 — Assemble the affogato float

1.    Add ½ cup jelly to a tall glass.

2.    Add two big scoops of vanilla ice cream.

3.    Slowly pour 120–150 ml warm Thai tea over the ice cream to create those marbled swirls.

4.    Optional: Finish with a splash of evaporated milk for extra richness.

 

Variations

  • Brown Sugar Swirl: Drizzle 1–2 tsp brown sugar syrup inside the glass before assembling.

  • Coconut Dream: Use coconut ice cream and a splash of coconut milk.

  • Iced Float: Fill the glass with ice, add jelly + tea first, then float your scoops on top.

 

Where to find the jelly (quick guide)

Best options (ready-to-use):

  • Asian grocery stores (international aisle/refrigerated desserts): look for canned grass jelly or ready-to-eat jelly cups (grass jelly/konjac).

  • Thai supermarkets/mini-marts: “เฉาก๊วย” (grass jelly) in cans or cups; dice before using.

  • Online marketplaces: search “grass jelly can,” “herbal jelly,” or “mesona jelly.”

  • Boba tea supply shops: sell grass jelly and coffee jelly toppings in tubs.
