Crispy banana chips are a classic Thai snack—and they’re surprisingly fun to make at home!

Inspired by a Thai cooking method featured in the original video, here are a few simple tips for making crispy, golden banana chips in two delicious styles: sweet or salty.

Start with Green Namwa Bananas

For Thai-style banana chips, green Namwa bananas (กล้วยน้ำว้า) work especially well because they are firm and not too sweet.



Once peeled, bananas can start turning brown quickly. To help keep them golden, place them immediately into water with lemon or lime.


Tip: The quicker you get the banana into the citrus water, the better!


1.      Slice Thin for Extra Crunch

Thin, even slices are the key to crispy banana chips.



For an easy way to keep the slices consistent, use a banana slicer and slice the bananas directly into the frying oil. This also helps prevent the slices from sticking together before they reach the oil.



3. For Salty Chips 🧂     

Want something simple and savory?


The method uses a mixture of:

  • 200 ml water

  • 1 tbsp unsalted butter or margarine

  • 1 tsp salt


While the banana chips are frying, a small amount of the mixture is added to the oil. You'll hear plenty of hissing and sizzling as the moisture evaporates.


Keep frying until the sizzling becomes much quieter. This helps the chips become crispy while adding a light, even salty-buttery flavor.

⚠️ Always be extremely careful when adding liquid to hot oil, as it can splatter.



4. For Sweet Chips 🍯

If you prefer your banana chips sweet, try the double-fry method.


Prepare a simple syrup with:

  • 500 ml water

  • 2 tbsp butter

  • 150 g sugar


Let the syrup cool completely. Then: Fry → Drain → Soak → Fry Again


Fry the banana slices until crispy, drain them, coat them with the cooled syrup, and fry them again until crisp. The result is a lightly sweet, crunchy coating that lets the banana flavor shine through.
